Tasty Tuesday: Stay in Bed Stew

You gotta love the title of this recipe, which is of course, what attracted me about it. Everyone has their favorite recipe for stew — this is mine, made in the slow cooker. Once you throw it together, turn it on Low and relax!

1 pound stewing beef, cut in cubes

2 tbsp flour

2 tbsp vegetable oil

salt and pepper to taste

1 small onion, sliced

4 medium potatoes, peeled and cubed

3/4 cup carrots, peeled and sliced

3/4 cup frozen green beans

1/2 cup frozen corn

1 large bottle vegetable juice (eg. V8)

2 bay leaves

2 tsp Worchestershire sauce

2 tsp OXO beef bouillion powder

Dredge beef in flour, shaking off excess. Heat vegetable oil in frying pan, and saute beef until nicely browned. Add to bottom of slow cooker/crock pot. Sprinkle with salt and pepper. Add all remaining ingredients. Cook on LOW approximately 8 hours. Enjoy!

    Love crock pots! They make cooking that much easier. Thanks for the recipe, will have to try this one out.
