Tasty Tuesday: Yummy Pot Roast

Pot Roast is a great way to stretch your food dollar, and if done right it can be even tastier than more expensive cuts of beef. Serve with your favorite vegetables and mashed potatoes.

Pot Roast

1 tsp dried thyme

1 tsp dried rosemary

1 tsp paprika

2 tsp salt

1/2 tsp pepper

3 – 4 lb boneless chuck, rump, round or sirloin tip roast

2 tbsp olive oil

1 onion, chopped

5 cloves garlic, minced

1/4 cup red wine

1 1/2 cups beef broth

2 bay leaves

1 tbsp softened butter

2 tbsp flour

1 tbsp chopped parsley

Combine the thyme, rosemary, paprika, salt and pepper. Rub meat thoroughly. Marinate overnight wrapped in plastic wrap in fridge. Preheat oven to 350. Heat oil in large stock pot and brown roast on all sides using 2 spoons (do not pierce with fork). Remove meat. Add onion and garlic and saute until lightly browned. Add wine and stock. Bring to a simmer, scraping any browned bits. Return meat to the pot. Add bay leaves. Cover and bake 2 1/2 to 3 hours. Meanwhile, make a paste using fork with flour and butter. Remove meat from pot and cover with foil (let sit for 20 minutes before carving). Whisk flour paste into juices in pot. While sauce thickens, carve meat. Spoon the sauce over meat and serve. Serves 6 – 8.

    Love pot roast. I always do mine in the crock pot, so easy. I also make a gingersnap gravy to go with mine which spices things up!

      I know, I mostly have pot roast in the winter 😉
