Tasty Tuesday: Quick Maple Pudding

maple puddingAny recipe with ‘Quick’ in the title is usually a favorite of mine. This dessert is simple, delicious and easy to make. This isn’t your every day ‘Jello’ kind of pudding. It’s more like a cake smothered in maple syrup.

We love maple syrup in our house, which makes this a special treat. Try to use ‘real’ maple syrup if you can … store bought is mostly corn syrup. Fortunately in Canada maple syrup is easy to come by.

Serve this pudding with vanilla ice cream or whipped cream. 

Quick Maple Pudding

1 tbsp butter

3 tbsp white sugar

1 beaten egg

1 cup flour

2 tsp baking powder

1/4 tsp salt

1/2 cup milk

1 1/4 cups maple syrup

Cream butter and sugar. Add egg and mix well. In a separate bowl, mix dry ingredients. Add gradually to creamed mixture, alternating with milk, stirring just enough to blend. 

Grease a small casserole dish with butter. Pour maple syrup in bottom. Top with spoonfuls of batter, scraping extra from bowl with spatula. Bake at 350 for about 25 – 30 minutes or until golden brown.

    That sounds good. Kind of like a bread pudding almost. Or at least that is what the picture made me think of. Will definitely have to give this a try!

      You’re right, it’s a variation of bread pudding, without the bread LOL!

    Oh, now THAT’s a pudding. LOVE. And can I second you on the use of REAL maple syrup? Childhood vacations spent on a farm in Vermont have spoiled me forever for the real thing.
