Tasty Tuesday: Copper Penny Salad

I’m dedicating this week’s recipe to the Canadian copper penny, which was officially withdrawn from circulation yesterday. It’s the end of an era. No longer can we use phrases like ‘in for a penny, in for a pound’, ‘cost a pretty penny’, or ‘penny for your thoughts’. I can’t say I’ll miss those expressions. Nor will I miss lugging around the change. But somehow it makes me sad. Just one more thing that has become obselete, like eight-track tapes and the dial telephone.

Disclaimer: I’ve never made this salad myself, but if you’re a fan of carrots, I’m sure you’ll enjoy it. I found it in an older cookbook, so I think it’s been around for a while.

copper penny saladCopper Penny Salad

1 cup sugar

1 cup white vinegar

1 cup vegetable oil

1 teaspoon dry mustard

1 teaspoon Worcestershire sauce

1 teaspoon salt

1 teaspoon coarsely ground black pepper

1 (10 3/4-ounce) can tomato soup

2 pounds carrots, peeled, cooked, and sliced

1 medium onion, sliced

1 green bell pepper, coarsely chopped

Combine the sugar, vinegar, oil, mustard, Worcestershire sauce, salt, and pepper in a saucepan over medium heat and bring to a boil. Remove from the heat and add the soup. Mix the carrots, onion, and bell pepper together in a large glass dish; pour the sauce over the vegetables, stir gently to combine, and refrigerate overnight. This salad will keep for up to 6 weeks in the refrigerator.

    I wonder if this will affect when we pay with Visa card or Interact? Are they still going to round out 99 cents to $1.00? The generation coming up won’t even know what a penny is. I do have a huge collection of pennies, so I’ll hang on to them, in case they become a collectors item.

    Interesting recipe for carrots, must give it a try sometime. thanks!

      No, it doesn’t affect debit or credit transactions, only cash. They’ll be rounding up or down.

        I’d love to have that residual of the rounding up! Imagine how much nation wide that would be in a year? Maybe we should have started a collect a penny company. LOL

      Apparently it’s going to save us money, since it costs more than 1 cent to make it 😉
